When Life Gives You Tomatoes!

Ah, tomatoes. Those cheerful little bursts of sunshine are such a joy...until they all decide to ripen at the same time! If you grow tomatoes, you know the rhythm well: nothing for days or weeks, and then suddenly, it’s tomato overload. Counters full. Baskets full. You’re trying to pawn them off on neighbors before they start getting a little too soft and wrinkly.


So what’s a homegrown tomato lover to do? Here’s one of my favorite tricks: freeze cherry tomatoes whole!


No blanching. No peeling. No fancy equipment. Just toss them in a freezer-safe container or bag, and you’re done.

I love doing this because so many of my recipes call for just a handful of fresh tomatoes. Instead of letting them go bad, I simply grab a few frozen ones, toss them right into the skillet or sauce, and voilà—instant garden-fresh flavor in the middle of winter! They defrost in minutes and add the perfect juicy pop to soups, pastas, and casseroles.


So next time your tomatoes start looking a little tired, don’t let them go to waste. Give them a second life in the freezer, and your future self will thank you.
